Shopping List

  • 10 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup sliced green onion
  • 1 cup chopped seeded tomato
  • 1 4-ounce can diced green chile peppers, drained
  • 1 2.25-ounce can sliced pitted ripe olives, drained
  • 1 15-ounce can black beans, rinsed and drained
  • Purchased salsa
  • Sour cream

Instructions

Preheat oven to 400F. Divide tortilla chips between two 12-inch round pizza pans or oven-save serving platters, spreading to the edges. Top chips with half of the cheddar cheese, half of the Monterey Jack Cheese, the green onion, tomato, and chile peppers. Sprinkle with remaining cheese, the olives, and black beans.

Bake, uncovered, one pan at a time, in the preheated oven for 5 to 7 minutes or until cheese melts. Serve immediately with salsa and sour cream.

Yields about 8-10 servings.
