Almond Peach Meringue Love Nests

- Nests:
- 4 egg whites, room temperature
- 1 tsp cream of tartar
- 2/3 cup granulated sugar
- 2/3 cup icing sugar
- Almond Peach Filling:
- 1/2 cup whole blanched almonds
- 1/2 cup granulated sugar
- 1/4 cup water
- 250g mascarpone cheese
- 30 ml Peach Schnapps
- 30 ml liquid honey
- 1 can of sliced peaches, drained
Instructions
NESTS:
Line bottoms of 2 baking sheets with parchment (not waxed) paper. Trace 4 circles, 3 inches (7.5cm) in diameter and about 1 1/2 inches apart, on each paper. Turn paper over.
Beat egg whites and cream of tartar in a large bowl until soft peaks form.
Add granulated sugar, 1tbsp at a time, beating well, after each addition until sugar is dissolved.
Fold in icing sugar. Reserve 1/2 of it. Divide and spoon remaining egg white mixture onto circles. Spread evenly. Spoon reserved egg white mixture into pipping bag fitted with small open star tip. Create nest by pipping remaining meringue around edge of each circle twice. Bake in oven at 225F (110C) for about 1hr until dry. Turn oven of. Let stand in the oven with the door slightly ajar until cool. Makes 8 nests.
ALMOND PEACH FILLING:
Arrange almonds close together in single layer on greased baking sheet.
Combine sugar and water in medium saucepan. Heat and stir on medium-low untl sugar is dissolved. Bring to a boil on medium-high. Boil, uncovered, for about 8 min., without stirring, until deep golden brown. Drizzle over almonds. Let stand for about 20 minutes until set. Break into pieces. process in blender or food processor until coarsely chopped. Transfer to medium bowl.
Add next 3 ingredients. Stir. Makes about 1 1/2 filling.
Spoon 3 tbsp filling into each nest.
Arrange 2 or 3 peach slices on top of filling.
