Brown Rice with Mushrooms

    Shopping List

    • 1 cup brown rice
    • 1 small/medium shallot, thinly chopped
    • 1 1/2 cups mushrooms (you can use any type of mushrooms you like or have at home, or a variety of them)
    • 1 clove minced garlic
    • 1/4 cup olive oil
    • salt to taste

    Instructions

    In a medium pan, heat the olive oil, and sautee the onion and garlic for a couple of minutes (medium heat).
    Add the rice and mix well. Sautee for about 4 minutes stirring regularly.
    Add the mushrooms and mix.
    Add 3 cups of water, mix well and cover with a lid.
    Let simmer on medium/high heat for about 15-20 minutes or until the water has evaporated. Stir a couple of times to make sure all rice is cooked well.

    Yields about 6 medium portions.
