Chipotle Marinade
Shopping List
- 1-2 canned chipotles
- 2/3 cup beer
- 1/4 onion, finely diced
- 2-3 cloves of garlic, pressed or finely diced
- 3 tbsp. chopped cilantro
- Salt and Pepper to taste
- 1/2 tbsp honey- optional
- 2 tbs olive oil
- 1 pinch paprika
- 1 pinch garlic powder
Instructions
blend all ingredients in blender. If marinade is too thick add more beer.
I used this marinade on organic wild boar chops. Put meat to marinade in ceramic or glass dish, cover with marinade and let rest in fridge for 1.5 hrs - overnight, the longer the better!
- I reduced the leftover marinade into a dipping sauce for the chops. Be sure to heat/simmer for (at least) 5 mins on med. heat to ensure bacteria from raw meat is destroyed.
