Cinnamon Breakfast Muffins

- 1/2 cup of sugar
- 1 1/2 cups all-purpose flower
- 1 1/2 tsp. baking powder
- 1/4 tsp. nutmeg
- 1/8 tsp. salt
- 1 egg
- 1/2 cup milk
- 1/3 cup melted butter
- 1/4 cup melted butter (for cinnamon dipping)
- 1/4 cup sugar
- 1/2 tsp. cinnamon
Instructions
Preheat oven to 350F. Grease twelve 2 1/2-in muffin cups; set aside
In a bowl, mix together flour, 1/4 cup sugar, baking powder, nutmeg and salt.
In a small bowl, beat 1 egg, stir in milk and 1/3 cup melted butter. Add egg mixture to flour mixture, stirring until moistened (batter will be lumpy).
Spoon batter into muffin cups. Bake in pre-heated over for 20-25 minutes, or until wooden toothpick inserted in centre of muffins come out clean.
Combine 1/4 cup sugar and cinnamon. Let muffins cool, then dip muffin caps into 1/4 cup melted butter. Dust with sugar and cinnamon mixture.
