Cinnamon Coffee Cake

    Shopping List

    • For Cake:
    • 1cup low-fat plain yogurt
    • 1 egg
    • 1/4 cup soft margarine
    • 1tsp vanilla extract
    • 1 cup lightly packed brown sugar
    • 1tsp baking soda
    • 1 1/2 cups all-purpose flour
    • 2 tsp baking powder
    • For Topping:
    • 1/2 cup lightly packed brown sugar
    • 1 tbsp cinnamon
    • a couple of cinnamon sticks for garnish (optional)

    Instructions

    TOPPING:

    Combine sugar and cinnamon, mixing well. Set aside.

    CAKE:

    Preheat oven at 350F (180C)

    In a small bowl, bring yogurt and baking soda, mix well and set aside.

    In a separate bowl (a mixing bowl), beat margerine with sugar until blended. Add egg and vanilla, mix well for about 2 min.

    Mix flour and baking powder, and add to the margarine mixture, alternating with yogurt mixture (one small addition of dry mix, and one addition of wet mix, and so on).

    Grease and flour a 9-inch square cake pan. Spread half the mixture.

    Sprinkle half of the cinnamon and sugar topping over the batter in the pan. Cover with the remaining batter and sprinkle with the rest of the topping.

    Bake in oven for 35 minutes or until a toothpick comes out clean when inserted.

    Remove from oven and let it cool for about 10 or 15 min.

    Garnish with a couple of cinnamon sticks (optional). You can either cut it into squares or leave it as is.
