Cream of Broccoli

    Shopping List

    • 1 1/2 cup skim milk
    • 2 cups sodium-reduced chicken stock
    • 1 tsp olive oil
    • 6 cups chopped broccoli (uncooked)
    • 1 cup diced onion
    • 1 cup diced celery
    • 1 tsp fresh chopped dill (you can also used dried dill)
    • pepper to taste
    • extra broccoli heads, for garnish - optional

    Instructions

    In a large pot, heat the olive oil to medium heat. Add the onions and celery and cook until soft, about 5 minutes.

    Add the broccoli, chicken stock, pepper and dill. Bring to a boil. Cover the pot and reduce the heat to medium. Cook for about 15 minutes.

    Transfer ingredients to a food processor, add the skim milk, and puree. Return to the pot and heat over low heat, until it's hot (but not boiling).

    Serve and enjoy!
