Frittata with Cheese

    Shopping List

    • 8 eggs, lightly beaten
    • 1/2 cup milk
    • 1 tablespoon snipped fresh herb or 1 teaspoon dried herb, crushed
    • 1/4 teaspoon salt
    • 1/8 teaspoon ground black pepper
    • 1 cup vegetables
    • 2 tablespoons olive oil
    • 1/2 to 1 cup meat
    • 1/4 to 1/2 cup shredded or crumbled cheese (1 to 2 ounces)

    Instructions

    In a medium bowl combine eggs, milk, desired herb, salt, and pepper, set aside. In a 10-inch broiler proof skillet cook and stir desired vegetables in hot oil according to the tiem specified below or until vegetables are crisp-tender. Add desired meat to the skillet.

    Pour egg mixture over vegetables and meat in the skillet. Cook over medium heat. As egg mixture sets, run a spatula around the skillet edge, lifting egg mixture so uncooked portion flows underneath. Continue cooking and lifting edges until egg mixture is almost set (surface will be moist). Sprinkle with desired cheese.

    Preheat broiler. Broil 4 to 5 inches from heat for 1 to 2 minutes or until top is set and cheese melts. To serve, use a pizza cutter to cut into wedges. Makes 4 servings.
