Grilled apple slaw

Shopping List

  • 2 gala apples, cored and quartered
  • 4 cups cabbage, thinly sliced
  • 2 cups carrots, thinly sliced (you can buy it already sliced)
  • 1/2 sliced green onions
  • 1/4 cup pecans, coarsley chopped
  • DRESSING:
  • 1 tbsp dijon mustard
  • 2 tsp Canadian maple syrup
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • salt and pepper to taste

Instructions

Whisk all dressing ingredients in a small bowl or a cup. Set aside.

Preheat barbecue to high and lightly oil grill. Grill apple quarters turning once, until well marked but still firm, about 2 min. Cool until easy to handle and chop into bite-sice pieces.

Mix cabbage, carrots, apple, green onions and pecans. Add dressing and mix well. Keep in refrigerator until serve.

Yields 8.
