Roasted Cauliflower with Dates and Pine Nuts

    Shopping List

    • 1 large head cauliflower, cut into florets
    • 4 tbsp unsalted butter
    • 1/3 cup pine nuts
    • 1 clove garlic, minced
    • 1/2 cup pitted dates, coarsely chopped
    • salt and pepper to taste

    Instructions

    Preheat oven to 425F

    On a baking sheet, spread evenly the cauliflower and season with salt and pepper.

    Transfer to the oven and roast, tossing once, until golden brown at the edges, about 20 min.

    On a small skillet, put butter to medium to low heat. Once the butter has melted, add pine nuts and cook, stirring frequently until they are lightly brown - about 5 min. Add garlic and dates and continue to cook until they have softened, about 2 or 3 min, season with salt.

    Transfer the hot cauliflower to a serving bowl, drizzle the pine nut mixture over the top and toss to combine.

    Serve warm or at room temperature.
