Roasted Red Pepper and Goat Cheese Bruschetta
Shopping List
- 1 medium can roasted red peppers, drained
- 2 cloves garlic, peeled and halved
- 100g goat cheese, crumbled
- 4 tbsp olive oil
- 1 tbsp fresh basil (you can also use dried basil instead)
- salt to taste
- 1 large french baguette
- olive oil to drizzle on baguette
Instructions
Slice the baguette to 1inch slices. Place on a baking sheet and drizzle with olive oil and place under the grill (or broil in oven) for 2-3 minutes. Remove from the oven and set aside.
Slice the red peppers in thin stripes, bring to a medium bowl.
Chop garlic, add to bowl mix with olive oil, basil and salt to taste. Mix well.
Spread the goat cheese on the bread slices, then top off with roasted red pepper mix.
Enjoy!
Yields about 8 -10 slices.
For a bigger serving, simply double the amount of ingredients (ie 2 loafs of bread, 2 cans of roasted red peppers, 4 cloves garlic, 200g goat cheese, 2tbsp fresh basil and 7 tbsp olive oil).
