Vegan Chocolate chip cookies
Description
Great cookies, 0 colesterol! Vegan.
Shopping List
- 1 cup unbleached all-purpose flour
- 1 cup whole wheat or wihte whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup of vegan margarine (Earth Balance) at room temperature
- 1/4 cup organic brown sugar
- 1/4 cup organic sugar
- 1 teaspoon pure vanilla extract
- 1/2 cup non-dairy organic milk
- 1/2 cup dark chocolate chips
- 1 teaspoon coarse grind sea salt
Instructions
- Preheat oven 350F
- in a large bowl, sift flours, baking powder and salt together. Set aside.
- Using a mixer, cream margarine, sugars, vanilla and milk together.
- Add dry ingredients a little at a time to the wet mixture, until combined. Fold in chocolate chips.
- Scoop rounded tablespoons of dough onto an ungreased cookie sheet, spacing an inch apart. The dough will not spread much during baking, so press dough into the flat, cookie-like shape and size you'd like your cookie to have.
- Lightly sprinkle tops of cookies with a few granules of coarse-grind sea salt.
- Bake for 10 to 13 minutes, or until cookies are set and edges are golden brown. Allow cookies to rest on cookie sheet for minute before transferring them to a cooling rack.
- store any remaining cookies in an airtight container.
